This is my go to post kids club meal for my eldest, when she’s tired and hungry it’s something she looks forward to and I know it packs in lots of fruit & veggies in an easy way - I microwave the the chilli and rice whilst making the salsa so it’s all on the table in 5 MINUTES
Serves 4
1 mango
1/4 cucumber
1/2 red pepper
1/2 lime
1/2 tbsp sesame oil
Dash of soy sauce (to taste)
Sprinkle of sesame seeds
Peel and dice the mango, finely chop the cucumber and red pepper. Place in a bowl with the lime juice, sesame oil, soy and sesame seeds - stir and serve!
