This hot summer calls for these amazing raspberry ripple & chocolate ice lollies! These were a big hit with our kids and it's such a simple recipe, all you'll need is:
10 fresh or frozen raspberries
5 tbsp dairy-free yoghurt (we used coconut)
Squeeze of date syrup or maple syrup, to taste
Few squares of dark chocolate
1 tbsp freeze-dried raspberries
Mash the raspberries with the dairy-free yoghurt and date/maple syrup, mix until combined. Spoon into ice lolly moulds and freeze until solid. When ready to serve, remove from the moulds and drizzle with melted dark chocolate - it'll begin to set immediately - and sprinkle with the freeze-dried raspberries. Best enjoyed outside on a sunny day!
